Low Fodmap Shrimp Packet

I have never before cooked my dinner in a parchment paper or foil packet because it sounded boring to me as well as not hearty enough to satisfy anyone hungry for a dinner, but my daughter-in-law convinced me to try this method, saying my 6’5″ son actually loved eating her dinner packets and never complained that they were not satisfying enough. Since shrimp was what I had in the freezer, I decided to try a low fodmap shrimp packet. I loved it so much that I made it three nights in a row and was NOT bored.

The ingredients are simple and so is the cooking method. I used shrimp, but I plan to try a nice firm white fish like sole or fresh scallops or even fresh crabmeat and I definitely plan to add other kinds of vegetables such as artichoke hearts, mushrooms, etc. For now, here is my simple dinner packet that I found to be so surprisingly hearty and delicious. Ingredient amounts are for  one packet. Double, triple or quadruple ingredients for more people.

Ingredients:

2 cups uncooked shrimp (or frozen pre-cooked if that’s all you have)

2 baby red potatoes, scrubbed and halved

1 cup  frozen whole green beans

1 ear of corn, husk and silk removed and cut in half (optional)

Juice and zest of 1 lemon or lime

1 tbsp or 2 extra virgin olive oil

1 large clove of garlic, sliced, sauteed in olive oil until oil is infused

Salt and pepper to taste

2 tbsp of water

2   12″ sheets of aluminum foil or 1 sheet of  12″ heavy duty foil

or 12″ heavy parchment paper

Directions:

Shrimp in a Packet 001If using precooked frozen shrimp, place them in a colander and run cold water over them for five minutes or until all are defrosted. Let shrimp drain in colander while you prepare the vegetables. If using uncooked shrimp, peel and devain them, place them in a bowl and set them aside.

 

Shrimp in a Packet 015Scrub the baby potatoes under cold water and cut in half. Place the potatoes and  green beans in a microwave safe bowl. Add 2 tbsp of water. Cover bowl with a plate and microwave on high for 4 minutes.

 

Shrimp in a Packet 003While vegetables are cooking in microwave, juice and zest the lemon or lime into a small bowl.

 

 

Shrimp in a Packet 010Shrimp in a Packet 011Saute the sliced garlic in some olive oil in a small skillet.  When the oil is infused with garlic flavor, remove the garlic. Place oil in the same bowl with the juice and zest. Add salt and pepper.Stir the mixture and set aside.

Shrimp in a Packet2 027When the potatoes and green beans are done, drain the water out of the bowl and then lay out the foil sheets. Place the green beans and potatoes in the center of the foil. Pile on the shrimp and one half or both halves of the corn. Drizzle the packet with the lemon or lime dressing.

 

Shrimp in a Packet2 019Shrimp in a Packet 025Bring two opposite long sides of the foil up to meet in center; fold edges over twice to make a tight seal. Double fold remaining open sides on the ends to seal packet tightly.Place the packet on a cookie sheet and place in a 350º oven for for 15 – 20 minutes depending on the size of your shrimp.

You should have condiments on hand such as tartar sauce or melted butter and slices of lime or lemon.

Low Fodmap shrimp packet takes no time to put together using the microwave to parboil the veggies and the oven to finish off the cooking. I used corn, green beans, fresh Carolina shrimp and lovely spices to create a delicious summer dinner.

Ingredients
  

  • Ingredients:
  • 2 cups uncooked shrimp or frozen pre-cooked if that's all you have
  • 2 baby red potatoes scrubbed and halved
  • 1 cup frozen whole green beans
  • 1 ear of corn husk and silk removed and cut in half (optional)
  • Juice and zest of 1 lemon or lime
  • 1 or 2 tbsp extra virgin olive oil
  • 1 large garlic clove, sliced thin pressed
  • Salt and pepper to taste
  • 2 tbsp of water
  • 2 12 " sheets of aluminum foil or 1 sheet of 12" heavy duty foil

  • If using frozen precooked shrimp, place the frozen shrimp in a colander and run cold water over them for five minutes or until all are defrosted. Let shrimp drain in colander while you prepare the vegetables. If using uncooked shrimp, peel and devain them, place them in a bowl and set them aside.
  • Scrub the baby potatoes under cold water, dry them, place them on a cutting board and cut each one in half.
  • Place the potatoes and green beans in a microwave safe bowl. Add 2 tbsp of water. Cover bowl with a plate and microwave on high for 4 minutes.
  • While vegetables are cooking in microwave, juice and zest the lemon or lime into a small bowl.
  • In a small skillet, saute the garlic slices in the olive oil until oil is infused with garlic flavor. Stir so it doesn't burn. Add oil to the bowl of juice and zest, salt and pepper. Stir the mixture and set aside.
  • When the potatoes and green beans are done, drain the water out of the bowl. Lay out the foil sheets. Place the drained green beans and potatoes in the center of the foil. Pile on the shrimp and one half or both halves of the corn. Drizzle the all the food with the lime dressing.
  • Bring two opposite long sides of the foil up to meet in the center; fold edges over twice to make a tight seal. Double fold remaining open sides on the ends to seal packet tightly.
  • Place the packet on a cookie sheet and place in a 350º oven for for 15 - 20 minutes depending on the size of your shrimp. Open up the packet to see if the potatoes and beans are done. If not, seal up the packet and return to oven for 5 to 10 mor minutes.
  • To serve, give each person a packet or open the packets on individual plates and then serve with extra melted butter and slices of lime. Pass a basket of crusty french bread.
