Why I Began an IBS Food Blog
Hi, I’m Joan. I’m a Nana, a mom, a college professor, and a food blogger. I grew up in Mt. Vernon, NY, as part of a beautiful Italian family, but moved south to Atlanta and then Charlottesville, VA, where I raised my family of five children. I live in Connecticut, which looks much like Virginia, so I love it here.
In the past, I had a blog of my family’s Italian food and my in-law’s southern recipes where I never mentioned that I couldn’t eat most of the recipes I shared. I blogged about pasta with garlicky sauce, homemade biscuits, cheesy grits, fried corn, and coconut cake. All that time, few people knew that I suffered from chronic Irritable Bowel Syndrome, an insidious colon disorder that can make what to eat, where to dine, and how to travel a constant dilemma.
Then I started this blog, ibskitchn.com, that contains recipes people like me, and other IBS folk, really can eat – recipes without fodmaps, insoluble fiber, or chemicals that will send us to “il bagno” for maybe even weeks at a time.
Here on this blog, I revamp my Italian and southern family recipes so we can still enjoy them safely and without the horrible repercussions I suffered in the past. I hope this strikes a happy chord with all my fellow IBS sufferers. My goal is for us to control our IBS better than ever before with great recipes and helpful advice.
