Can I convert a favorite peach (apple) cake recipe to one that is gluten free without sacrificing the flavor and charm of the original recipe? Maybe and maybe not.
Now that I am doing the low fodmap elimination diet, I have to either change my old recipes to gluten free, low fodmap or both.Sadly, this recipe is not low fodmap because peaches and apples contain high fodmap chemicals even in small amounts, but by substituting GF flour, it does become gluten free.
Since my original recipe is very forgiving – just a simple batter poured over sliced and sugared fruit – I am trusting it will be adaptable to GF flour, but as my mother famously said to every single thing I ever begged her for: “We’ll see.”
Ingredients:
6 peaches or apples,peeled, sugared and sliced (or fewer if you wish)
1 cup King Arthur Measure for Measure GF flour
1 and 1/2 tsps baking powder
dash of salt
1 stick of butter, melted
1 cup of sugar
2-3 tbsp of sugar for the apples
1/2 tsp of cinnamon to add while sugaring the peaches or apples
1 cup of milk
1 tsp pure vanilla extract, gluten free
Confectioners sugar to dust top
Directions:
Prehat the oven to 350º and butter a 9″ ceramic dish or ceramic fluted tart pan or pie dish.
Peel the peaches (apples) and slice them into 1/4 inch segments and place in a large bowl. Sprinkle them with the 2 to 3 tbsp sugar and 1/2 tsp of cinnamon. Toss them gently with a wooden spoon until all the peaches or apples are coated with sugar and cinnamon.
Place them in a 9″ ceramic pan or fluted ceramic tart pan that was buttered all over beforehand. Set aside.
In a large bowl place 1 cup of KA Measure for Measure GF flour, 1 and 1/2 tsp baking powder and the dash of salt. Whisk together until mixed well. Pour one cup milk into a measuring cup and whisk the milk into the dry mixture until it is well incorporated. Then stir in 1 cup of sugar.Place the butter in a microwave safe bowl and microwave for 45 seconds. Let cool briefly. Stir the melted butter into the batter just until it is well incorporated. Flavor the batter with 1 tsp of vanilla and stir it into the batter.
Pour the batter over the sliced peaches or apples.
Place the cake into the preheated oven and let it bake for 45 to 50 minutes or until the top is light golden brown and when you press it, it bounces back against your finger. Use a toothpick that comes out clean if you prefer to test doneness with a toothpick.Take out the cake and place the dish on a rack to cool. When cool dust with confectioners sugar.
You can serve it warm with lactose-free ice cream or whipped cream or even at room temperature. This dessert is so good that you will long for it in the winter, so be sure to freeze a few bags of peaches; then, in the winter, you can just defrost them and make yourself a remembrance of summertime in the middle of a snowstorm.
